Taken from the official strategy guide:

There is a long dungeon ahead, followed by a boss-battle, so you might want to stock up on potions and such at Rosaria before going in. Once you do go, you will arrive at the South-West part. There are doorways here of four colors: gray, green, blue and red. The latter three require the use of switches to open or close them.
First head east then north-east and press the switch to open the blue gates. Go west and then north through the now-opened blue gate. Turn right and go through the doorway to the Dungeon: South-East. Press the switch to the north, with the symbol of an opened green gate.
Go back to the Dungeon: South-West and all the way to the west. Then go back south to where you entered the dungeon. Press the first switch again (the one with the opened blue gate symbol). The green and blue gates are now open.
Go all the way north and turn left when you reach a closed red gate. Press the switch there to open the red gates. With the green ones now closed, you have to go back and north to the Dungeon: North-West.
Follow the hallway west, beyond the blue gate, and go back south to Dungeon: South-West. Go south and then all the way east once you reach a closed green gate. At Dungeon: South-East, press the switch again that opens the green gates. Red and green are now open.
Go all the way back to where you entered the dungeon at the Dungeon: South-West. From there, go east and through the passageway to the Dungeon: South-East again. Keep going east and at the end turn north. Go all the way up to the Dungeon: North-
East. Keep going north until you reach a new room with statues and tables, simply called Dungeon. Save and prepare for an upcoming boss fight, then head up for a cutscene.

I tried to make a map of the maze to post it here, but there where a few points where i couldn't reach because all doors needed to be opened to see if some places where the same, so i gave up...

Don't worry, someone's working on a video for it soon. ^_^

Wanted to release a Community-Guide for that soon
Its a lot of work tho and i surely wont make screenshots to put it together that way :'D

Yeah, I have no idea where the secret room in this level is, either...

Secret room?

Oh and sorry for telling you i make a map, i cant seem to find time for that atm

The walkthrough for this mentions the fifth and final hidden room is somewhere in Transylvania, but it just lists it as "Dracula's Castle - Room", which is rather unhelpful.

when i played the level i draw a map.
one thing i noticed: in the north east area, to halway in the north west of that (with the 4 healing orbs). Is that even reachable? because in my map i didn't find any posible aproach for it, because there are all 3 colours on all ways.
