Don't worry about me shooting an arrow at the start- That's just cause, since I already beat him, that's how you need to start the fight. The opening of my approach is the same as when I first fought him.
Good luck!
Once you find something that works, it will always work. It's just a matter of really learning how the hands move, and reacting properly to exploit them.
PS : Just did a couple of researches, and I couldn't easily find mini walkthroughs to beat him in Hard mode, nor any for The Soul and the final boss in Hard or No-Roll mode. This is literally one of the only Titan/Mode that you can easily find videos for on Google by just typing "gol set no roll".
PSS : Yeah also I realize the "luck" part needs some clarification indeed xD I also don't believe it has to do anything with luck (I have found a pattern that I can reproduce to at least get the hands to push the switches, I jsut still can't avoid them after that). However, the whole game, even in No-Roll mode, is based around the basic fact that it becomes natural after a couple of plays to find the weakness of the boss. Here it is all a matter of the hands not going the same speed in all four directions and hitboxes (probably intentionnally, not meanning it is a glitch in any way) going a bit farther on some sides of the hands, which is mostly technical. This results in trying out many different ways to avoid the hands until you find the right one for you, but you can never know exactly when it will hit you (the only sure thing is that going down apparently ALWAYS saves you, and going on the outer side of the hand also seems to do so if you have the room to). So in short (since that wasn't too short xD) I think this Titan in No-Roll mode betrays the whole concept that I loved during my playtime with the game !
This results in exploiting aiming nuances against the Soul, triggering Gol-Qayin's spin right away by alternating hitboxes as fluidly as possible, and finding the holes in Gol-Set's hand's pathfinding. I don't think it betrays the concept at all. :)
