How do I set rooms to prisoner rooms?
I want to set off a refrigerator, hospital, and cell block for them, but whenever I do, they either don't use the freezer or they treat the hospital as a cell.

A room either has a bed set for prisoners or it doesn't. There is no such thing as prisoner rooms outside of that. They stay in their cell indefinitely outside of escapes. Prisoner beds can be set to medical for a prisoner hosital but that is still tied fully to the bed.

I believe it is by design, but prisoners have very limited interactivity with their environment in the first place. Even if you desire to give them access to the finest and most luxuriant utilities during their extended stay in Organ Harvest Prison they will not utilize them without the aid of another mod (if such a thing exists - I've never cared enough to look for one, they're prisoners, they don't get privileges).

So how can I make a fully automated system using nutrient paste? Whenever I put meat in, they won't eat it before it rots.

We already had this conversation. You just put the paste dispenser as one of the walls with a fridge behind it with the hoppers in the fridge. As long as the paste dispenser use location is inside a prison it'll be a different colour and assigned for automatic prisoner use. The prisoner then use it. It is and I must stress this again, a paste dispenser is a WALL. It will separate rooms and prevent temperature exchange. You can make a fridge out of it the same as litterally any other wall.

Put a nutrient dispenser that dispenses into a prison barrack (the back of the dispenser being outside the prison so that your normal pawns can fill it). Someone will still need to fill the nutrient dispenser, but other then that the prisoners will feed themselves automatically assuming the prisoners can walk.

You can have doors held open between their cells and the infirmary and as long as a paste dispenser is facing into a prison room that the prisoners can path to they will feed themselves. I like to have the paste dispenser in the infirmary, makes things easier for doctors and wardens dealing with bedridden prisoners.

If you want to keep them long term you will want the prisoners to have the dead calm gene if you plan on letting them roam (and also if using a mod to make them work) or they will try to break out often due to the number of doors and all the prisoners will likely try to break out as one.

I built a house separate from the main facility with doors and a bedroll that was assigned for a prisoner. The bed draws a zone around the room and creates a prison area. The other colonist would walk over give food, medicine and try to convince them. I put a chair and a wall lamp. It seems the if the prisoner has some niceties they convert to friendly faster but if it is too stark it can take a long time.

yeah, recruitment is faster when they have a nice cell. Ideology conversion is faster if they have a bad cell (I'm not sure that makes much sense, but...).

I just tried a Prisoner Recreation mod because it drove me nuts to see my prisoner just wandering all the time (sanguophage for gene extraction, so it was an extended stay).
It did work, but it seemed to also add a recreation bar to various other guests that caused problems (neutral rescues in my hospital got one, but didn't watch the tv I gave them, so they just got more unhappy and unlike with certain other types of guests, my colonists didn't do anything to cheer them up.

And the nutri dispenser needs to be attached to the prisoner barracks - then they would go there. You need a small 1x3 room with a door behind it for the hoppers, and perhaps a freezer - so Your people can fill the hoppers. The color of the dispenser would then also turn to yellow, so Your people can´t get food for themselves out of it, but they would use it to feed the prisoners if they can´t walk. Don´t forget it´s still about the number of doors, so You only want one door towards the barracks - preferably next to the nutri dispenser, so the access point is one tile from the door, that they grab it on the way if need be. And then somewhere You do a hospital area. Either with extra door, or open, but then it somehow defeats the point for the clean tiles. You could place the medic beds near the dispenser though, so You people have a short way to go. And have a one tile storage for herbals, so they store only 25 and they won´t rot. Usually i do an extra hospital room with shelves for all the organs - and an exit towards the gene extractor.

What matters is the access point. Theoretically You could have a freezer, and two dispensers in two directions - one towards the prison, and one towards an open area, so it would be for Your own colonists.

Advantage of a barrack is that it´s bigger, and You can place a couple of chairs and a table, so impressiveness and beauty keeps the mood in check. Perhaps add a statue. And turrets...

I would make a small refrigerated room around the nutrient paste dispenser so that the food on the hoppers are kept frozen, but the prisoners can still access the actual dispenser section.

In case you weren't sure, to make a barrack a prison barracks, simply take a bed in a closed room, and press y or the mark as prisoner bed button. Then when you have a prisoner, you can keep them in your prison cell.
You can also assign sleeping spots to prisoners if it's a last minute thing/you don't have a bed ready and need a place for someone.
The nicer the prison barracks, the happier the prisoner will be, meaning less mental breaks and faster recruitment time as well.
Also, you want to make sure that if your prisoner is injured, you keep the room clean because they can still get infection. You can also set beds to be both prisoner and medical (the color will be a darker yellow than the normal prisoner beds)
