Any downsides to a mix of Dining Room// Rec Room// "Guest rooms" for Hospitality??
Iam even reusing the chairs for the dining table to use for the rec Stuff (Poker table etc).

If you're one of those people that strive for maximum efficiency of every room down to the third decimal, then there might be some issues for your OCD, but for practical effect there's no problem. I've always combined rec room/dining room, usually in a large central building that the homes/rooms are built around. Haven't had any issues with this setup.
having a single large room for eating/rec/sleeping is an efficient use of space, though until it's impressive it will be a net penalty from barracks, and disturbed sleeps can get annoying

I tend to provide Guests with that sort of amenity, too. They have everything they would "need" in their own space.

The biggest benefit is that a very hungry Guest will be able to easily and quickly eat a meal in a nice environment, preventing them from getting dissatisfied/no-table. If they feel the immediate need to "play a game" or "watch TV" they can do it there as well.

But, I also have my own dinging/rec facility open to them, too, and that means the majority of them are going to choose to eat there, because it's always nice, over in their own rooms. I could Zone it, of course, but I generally forget or just don't bother.

So, in effect? It's not really a big deal other than giving them a good place to quickly sit down to eat.

For me, it has "roleplay" value and gameplay value, as I enjoy designing/fitting it all into one space for them.

Note: I always try to locate their "shop" so it's shared between two/more such Guest complexes/rooms/houses. That's just a fiddly bit I try to achieve, though.

Disturbed sleep... So no beds for me there.

However...

I often have the dinning room on one side with the TV on the other, or even a cafeteria style with all the tables facing the big TV at the end, because this is clearly something that happens in real life.

And why not shove a pool table in the corner, for the same reason.
