If I have pawns with jobs they do almost equally frequently I pick generalist gear (those that add to general work speed) instead. My older colonies had farmer/ranchers in farming gear, researcher/doctors in research gear, while everyone else wore jumpsuits meant to give them at least some work speed bonuses.
I've since moved on from that level of micro, and these days either give them jumpsuits or let them wear whatever; once they're skilled enough the clothes generally don't matter. Researchers though I might still outfit accordingly since getting research in faster with all the gear and ideology bonuses is very profitable.
On the specialized task though while Doc Farmer might spend more time farming I think getting a bonus when doing operations might be more important. Though don't do those often so might just keep an outfit on the side for when that comes up.
