I'm surprised nobody has linked this yet; I thought it was a fairly popular mod. I'm not exactly sure how it works, but I'm fairly certain you can upload someone into an android body, thereby not having to deal with with old age. Of course, androids do have their own conditions, like rust, corrupt memory, etc., but I'm fairly certain all of these can be fixed with items the mod adds.
I would however like to note that I'm only vaguely familiar with Ghost in the Shell, so I'm not quite sure this mods is super close to it.
Ill look into this one, its just hard to judge it from first glance, however this may be what im after to a degree. At first glance, isnt this more like cloning?
It's a pretty OP mod but I keep it for some fun stuff like scar removal and limb recovery as well as healing potions.

Not quite cloning, but yeah sorta. You basically have a machine with which you can create an entirely new body, in which you can then insert the 'cortical stack' of your colonist, which contains all their skills, personality etc. So basically their brain, though technically it's a disc which goes in the back of the neck/top of the spine area.
It's been a while since I tried the mod, so I'm fuzzy on the details. There are some specifications you can give this fresh body to make it a bit stronger than a natural body, but it's basically still entirely organic.
The immortality comes from the 'cortical stack' disc, which can be extracted after death and inserted into a new body. The stack can get destroyed (if the subject's head gets blown off) but you can make multiple copies of the same stack. The stacks are quite rare though, and can't be crafted.
It's a good mod, I like it, but not sure it's quite what you're looking for.
Look up Androids. There is one that has human-looking androids that you can craft, and has options to adjust their looks and some stats, as well as traits. Effectively lets you recreate your colonists, but mind that the more you add/change before crafting, the more materials and time you'll need to make the android.
Don't let the poor initial presentation put you off, not everything (or even most) is actual female in looks.
Within 5 years of ingame time i never had a message like Birthday popping up. But suddenly, Birthday!!! I was wondering since it's been 5 years and why now? Will it be a big party?
Well, no... but he got a "birthday present" -> Bad Back at the age of 73 XD Must be from constructing and butchering all those Megasloths :)
