Moisture pumps work on any wet Terrain except for deep water

They don't work on rivers either.

Also they work better on marshes than other water tiles. Marshes will turn into regular soil whereas other types of water will turn into stony soil (or ice, in ice sheet/sea ice biome)

Doesn't one type turn into sand as well?

Shallow water -> Ice (if in Ice or Sea Ice biome)
Shallow water -> Stony soil (all other biomes)
Shallow ocean water -> Ice (if in Ice or Sea Ice biome)
Shallow ocean water -> Stony soil (all other biomes)

All other terrain is unaffected.

Yes but soft sand isn't water.
It is really annoying that it isn't bridgeable though.
