remove all mods that were updated since your last successful game start up
TLDR: A mod I was using suddenly needed a few mods. I added them and Rimworld finally worked.
Read this with full attention, everyone, because you will need to do it at some point. I was manually adding mods instead of hitting the "Load modlist from save" from my savegame and I found out that one of the mods that I was using, Biomes! Islands, got updated but needed two dependent mods to work: Pathfinding Framework and Prepatcher. I will link everything below in case you want to mess things around or experiment.
It took me 10 minutes while I was browsing the mods menu until I realized that the Biomes! Islands was in red text with the warnings that needed these mods. And I got approximately 240 mods (yeah, I counted them).
You can imagine the sigh of relief I had after I restarted the game successfully with the updated modpack.
This is why you shouldn't trust the "Load modlist from save" button blindly because it doesn't solve problems, practically speaking. You need to check the mods menu and see for yourself.

I always stay in the mod resources channels because those have the most info I believe are important/interesting when playing with mods.
I use browse channels to not overwhelm myself with the amount of channels the server has.
#general, #rimworld and #modding resources, I have the voice channels hidden because most of the time it's quite active or nobody is in there. Another important note, you can also go there for troubleshooting when you play with mods and have errors. Some channels have recently been changed into forums to have more organised conversations.
