Hydrophonics hay grass?
cant grow grass in hydroponics? any substitutions for animal feed in hydro?

Not really sure what you mean by that, but typically you would have one field of say rice and one field of haygrass, the hay would be fed to cows in return for milk and meat and then you would use the rice and milk/meat to make fine meals for a mood bonus and much higher efficiency than vegetarian meals.

I assume you can't just grow year round because of winter on your map. I usually make fields of grass for them to graze but you need a lot of it. Might also consider unticking sowing when it's fully sowed so your growers don't run back and forth to plant a couple of grass tiles. The point in cows, chickens and meat producing animals is a steady supply of lavish meals.
