Work table materials

For things like the butcher table or stonecutters table, does it make any difference if you construct them from wood or steel or anything else, or is it purely aesthetic?

Its purely aesthetic, the table will function the same no matter what its built out of. The option is really there for the player to prioritize what materials can be spent on a table vs other projects

I believe its just for the player, but don't quote me on that, I've never looked at the tables specifically to check

Possibly some effect on flammability. I usually just use what I deem best compared to the biome I am in. If I am in a biome with plenty of wood, I always use that for benches when possible. Else, I try to use stone blocks when possible, followed by steel when necessary.
