I'm not sure what you mean...

Incapable of...

Dumb labor: Cleaning and hauling
Caring: Doctoring, Warden
Intellectual: Researching
Crafting, Firefighting, Artistic: Self explanatory.

That's off the top of my head, so it's not 100% complete or accurate.

If it has no text after it, they are not incapable of anything.

Not sure if "caring" effects having a relationship with another colonist..but it does with doctoring and grim says wardening too.

Incapable of:
social = no wardening
caring = no doctoring
scary = firefighting
dumb labor = hauling, cleaning, plant cutting
skilled labor = cooking, construction, growing, mining, smithing, tailoring, crafting
intellectual = research
violent = hunting, shooting, melee

any named ability = self explanatory

think that may be all of them, if anyone has more, I'll edit and add
