Now, you need supplies.. At a minimum, you need enough food to feed people (trip time is visible at the top), and you should also send some medicine just in case. Survival rations are best, since they won't spoil. Having good plant skills is handy too, since your colonists can forage along the way, if it's the correct season. Add a few days extra food, just in case you get slowed down (wounds, ambush, etc). Also factor in the person you are rescuing, who will also need additional food.
Once ready, click accept at the bottom, and the colonists will gather the supplies, and start travelling. Just remember that if you send all of your colonists on the expedition, you will have nobody to guard your home.
Once you have finished whatever you need to do (ie: rescue the person in this case), switch back to the world map, select their location and reform the caravan, add any new people / stuff, and they will re-gather up. They will NOT however auto travel to the return waypoint (that is just there for food calculation), you will need to select them on the map, and then right click on your settlement and choose "Enter <name here>", so that they start the return trip.
Another thing to note: raid sizes won't shrink just because your colonists are travelling. Pawns in a caravan (and their gear) are still counted towards the wealth of your settlement.
You also don't need any special type of food if it's less than ~1½ days away. Regular meals don't spoil *that* quickly and if your expedition runs out of food a few hours from home, they'll still make it back. But the return trip might take longer if someone gets injured.
