Keep your pawn drafted and order them to attack the downed pawn until they die. You get the kill credit then.
You can force stab them while they are downed on the ground and kill them off that way to get the mood buff. I haven't dabbled with noble weapons yet but if the thought description says that you only need to 'win' a fight with the weapon then it would make sense that it would trigger at pawn being downed rather than being killed, I agree.
Stuff like that happens way too often but it's probably hard to code to prevent that. Requires a lot of checks.
