Report a translation problem
You can use the 'Try place near thing' or 'Try place direct thing' from the 'Tools - Spawning' list. In the list that'll pop up you can choose Granite, Sandstone, etc., which will place mountain tiles of that type.
The problem with this is they won't have fog of war on them, which makes them stand out from normal mountain tiles. If you want to put fog of war back, you'll need to choose 'Refog map' from the 'Actions - Misc' list (at the bottom). Just be aware, it'll fog everything indoors, so if you've built houses and things, you'll need to destroy a wall to open them up to remove the fog. Very fiddly.
The only tool for making roofs that I'm aware of is the one near the bottom of the 'Tools - General' list, however that only makes constructed roofs, not thick roofs. So I don't think that's possible.
