but there's a too big animal generation, and hen the map is full i drop tu 18-20fps constant.

but even ith two lv 20 shooter hunter, i can't hunt all those animals fast enough

is that a tips to decrease those animals quickly or limit their spawning ?

It won't decrease animal generation but it will decrease the burden they place on your poor potato.

Make 3, pens, 1 for males and 1 for females, set 2 pens Male only and Female only, the 3rd is disabled most of the time and not used, when you want more animals, enable it and take the animals you want to breed there....

16 gigs of ram should pull you through most maps and a small amount of mods.

But if you're running a lot of mods the more slowdown you will get, it really is a bottleneck especially for older computers with lower ram.

I take it you're not running an animal breeding ranch?

idk for the ram, i only use atm 8Go/16
maybe it comes from my CPU, a i5-7400, i would like to upgrade, but idk if it will change anything as new cpu have a lot of core and rimworld only use one

Have you considered just trimming the mod list?

I know it's blasphemy but some mods really add a lot of CPU calculations that can impact performance. Some mods in particular just clubber your CPU like a poor defenseless seal caught on the ice. Especially the combat mechanic mods seem to add a lot of calculations, yes its awesomely realistic that way but at the same time, your PC probably thinks otherwise.

yeah i thought about that, but i have some issue to use the dubs perf analyser to see wich mod i should really remove first
and i don't know wich one i can safely remove mid game

This is the mod I know of that allows adjusting animal density in-game:

https://steamcommunity.com/sharedfiles/filedetails/?id=1507370392

It is not updated to 1.4 yet, Mlie is working on it.

Until then you can play on deserts or similar maps with very low density, or you can just edit the animal density on the biome files.

*\Steam\steamapps\common\RimWorld\Data\Core\Defs\BiomeDefs

Find the biome you want to play on, near the top you will find something like <animalDensity>3.7</animalDensity> which is for Temperate Forests, change that number to something lower. Arid Shrublands are 1.8, deserts are 0.4, to give you some examples of what might be good numbers to try.

I will say if your PC is not great then playing on something like a mountain desert map is going to give you much better performance than one of the forested maps. Animal density is a part of it, but plant density is also a major factor in performance.

A few suggestions:
1) Don't play a big map, even on pretty good computers it can just become so slow as the game progresses and the colony grows.
2) Consider building a moat around the outer edge. This would reduce the amount of area the animals can wander in.
3) Go mad hunting them all and clear the map, fill that freezer with meat.
4) Tame some bears and have them hunt on their own outside to reduce the numbers.
