Likewise, if you've been malnourished for some time, just because you've eaten a meal and are no longer hungry, that doesn't mean that your body is immediately back to how it was before you started starving. The body has to absorb nutrition from the food and slowly recover until it's at full health again.
Check the malnutrition status once every day or so. The malnutrition stat ticks down in blocks rather than continuously like heatstroke or hypothermia.
