You'll get the option to interact with the visitor.
The colonist with the higher Social skill will be better to use but overall, the main thing is to get a trade done, so if someone is busy, just get another person to talk to them. You'll have plenty of chances to trade and build up your silver or inventory , so you can use various colonists as you want to train up their skills as well (though to train up Social skill faster, just take prisoners as often as you can and Reduce Resistance on them even if you don't plan to recruit them).
The visitors usually stay for about a few days though, so you have some time to have your colonist finish his current job or even wake up, before talking to the visitor.
