How to create a thick mountain roof with developer's mode. I've found only common roof

There isn't a way to effect a "Thick Roof" in vanilla play.

Even mods that say they can have issues in truly altering them. ie: The roof can be "removed" but the tile definition still shows "thick roof" for instance. That might, IMO, be due to Insect Spawn mechanic necessities.

Whatever, I guess the mod I'm using to build thick mountain roof is just in my imagination. As long as it prevents mortar attacks and drop pod attacks I'm ok with the power of my imagination.

I know it's an old thread, but I was looking for answers to this today (May 2023) and it has become possible to create thick mountain roof with dev mode. General Category > Edit roof (rect) ... > pick "Overhead mountain". If for some reason you also want to put back mountain material as walls, use Spawning > Spawn thing ... > pick the name of the stone type you want. The entry that is the name of the stone alone will place a 1x1 natural wall of that stone wherever you click.
