Deep drilling never runs out, it provides infinite (albeit in small and time inefficient amounts) resources.
Otherwise, a long range mineral scanner is a better choice and is more suited to the mining outpost that the OP wants, once an ore deposit has been found, a caravan can be set up to head to the site, mine the limited ore, then return.
The site generates a sub-map, like a caravan encounter, that contains only the ore specified.
These sites are deleted after a while, and so don’t clutter the map, and once deleted a new site can generate in its position.
Only downside is that it requires a researcher to babysit the scanner. But late game researchers have nothing better to do.

U skeneru s dlouhým dosahem po vypravení karavany se musím starat i o jejich osadu dokud nedokončí těžbu? Tedy jako kdybych měl "dvě osady"? Nebo těžba běží "na pozadí"?
Then you send a caravan over there, and when you reach it it creates a small, temporary map, and you have 10 days to collect all the material and leave. (Which is plenty of time. Depending on the amount of miners you take with you and the type of resource you're mining, you can generally be out of there in 1-3 days.)
There may be enemies at the site (a small raid, or a number of manhunting animals) but usually the coast is clear and you can mine the stuff and head home without issues.
You can select which resource the scanner will search for, by the way, and a deposit of that resource will generally be the only thing of value at the site.
