Well, since you are also not helping us, there is only so much we can do for you. Also, bolding is done through bolding not through **.
Default keybind for hiding the UI is F11. Though, that hides the whole UI, not just part of it. Since you still see "blood bars" (whatever that is), we have to assume that the game is failing to render part of the UI. This usually only happens due to something added via a mod. This can happen In game, while gaming, even if the colony is several years old, without the issue happening previously. Had it happen once when a colonist changed clothes to something that didn't want to render correctly on the colonist bar. Made part of it disappear. Only found out after having perused the log files. I'd recommend posting a screenshot or an error log output so that people can help narrow it down.
Edit: they could also be on a mental break, or no longer part of your colony, as this would remove the ability to interact with them, but still show hp/mood/whatever.
Okay this isn't really relevant to your response, but I think what OP means is those health bars that appear behind a colonist's name when they get injured
