First thought is Vanilla Traits Expanded, the workaholic trait I think it's called.
There was a similar post by another one though who claimed the same as you did, so I think there is something causing the pawns to prune until break, but clearly not always.
What's your work priorities and the bio of the pawn?
I never had a risk of break though because the mood is quite high due to the passion for the work + incredible beautiful environment. But both my pruners start to neglect all three Food, Rest and Recreation (unless the schedule switches to Sleep, at which point they get something to eat and go to bed).
Maybe there's something off with the prioritization of pruning the Gauranlen tree. But so far it's been a minor issue.
Would be actually good if at least we'd know where exactly the bug comes from.
When I play next I'll try to have everything on 3 but Plant Cut (exception being the first 4 tasks (Firefighting, etc) on 1) and see if they still overdo it.
Bed rest is only resting to heal from injuries.
