Deleting the configs did not work, I've uninstalled + reinstalled which has done it! Thank you for the help :)

Go to your library -> right click RimWorld -> Properties -> Local Files -> Verify Integrity of Files
If that fails, try to uninstall and reinstall the game.
If that fails, uninstall the game, locate your game's folder and manually delete the files left behind by mods (they can cache files that the uninstaller doesn't remove).
If that fails, then you may be experiencing a hardware error that is showing up in the game. Verify your harddrive, RAM, gpu, cpu, and other components to make sure they're not damaged or dying in any way.
Fairly certainly I just need to wait a bit longer for everyone to get their mods up to date... again.
