How do I capture and convert raiders?
I've tried guides, and they always skip over the capturing bit and the details on conversion.

When they are downed on the ground select a colonist and right click the enemy and select capture. This requires an open prison bed in a reachable area. Once they are captured you get a prisoner menu when you select them where you can convert or recruit, among other fairly self explanatory options.

How do I build a prison bed? Do I need to research them?

It's just a normal bed in an enclosed room, click it and there should be a button called for prisoners or something like that

It doesn't need to be a real bed, either. Placing a sleeping spot and setting it to take prisoners will also work just fine (but remember that sleeping spots have some downsides)

Yup. Any place a colonist can sleep, you can select it and will be options to set it for Medical and/or Prisoners. Prisoner moods work very similar to colonists, so better beds and cells means better moods for easier conversion and less troubles/mental breaks, but of course that is an investment.

When the prisoner in is your set prison sell, you then also need to choose how to interact with the prisoner and tell your colonists how to, or whether to try and interact at all. A prisoner in a cell will have an additional prisoner tab when you select them for more options. You can set what food they get, maximum treatment, etc.
