In general, use granite for walls, steel for doors, marble for art, and wood for beds.
E.g. a table made out of Marble is inherently better looking than a Wooden or Slate one.(Excluding quality of course, an Excellent wooden chair is going to be better than a normal Marble one) That said, from what I've gathered there's a lot that shares the same values or only really matters in min/maxing. Like, iirc, Marble has a Beauty of 2 versus Granite that has 1, Slate also has Beauty 1 as well. So if your choice is between Granite and Slate... it doesn't matter which you pick since I think they both take the same amount of time to work with.
Though there's also Durability to factor in too. A Wooden Table is more flammable and has less Durability than a Granite Table... but unless you are putting them in warzones I doubt you'll have to worry about it.
Walls are similar in that regard. A Slate/Sandstone/Granite Wall is going to be tougher and less flammable than a Wooden Wall. Personally I try to use any kind of stone walls I can for houses or at the very least I use stone types for the City/Town Walls as a static defense.
Take everything I say with a grain of salt, I'm not well versed in this aspect of Rimworld. I also don't make it a habit to browse the wiki, so I could be totally wrong lol.
I typically build a base out of wood. Once I have enough cut stone, I replace the walls as stone is less flammable. I also chose the stone type I have available with the most hitpoints, so raiders have a harder time getting through. Excluding plasteel, slate I believe has the most hitpoint. For making sculptures, I try to use marble for the added beauty. Floors I dont think have any difference based on stone type, only floor type (ie carpet vs metal tile).
Clothing made out of different materials will have different stats. A jacket made out of hyperweave, synththread, or thrumbo fur will have drastically better stats than patchwork made from those rats and squirrels you mercilessly slaughtered. Devilstrand is a really good source of strong, semi-easily obtainable material. Its not the absolute best, but its hard to beat.
You can check out these differences yourself if you select an item and hit the " i " in the the description box. Ill often make two of the same thing using different materials (make sure they are the same quality - normal, excellent, etc) and compare the stats. You can also check the wiki.
So, I totally get all of the interesting 'ingredients' that you can use in Rimworld to craft armchairs for example ;)
The flammability thing is pretty important - plasteel has a lot more HP than steel and half the flammability (10% as opposed to 20%), if you have an oven-trap room setup with a plasteel pillar in the middle that you burn to generate heat to eventually overwhelm the enemies within, it'll burn a lot longer and therefore get the room temperature up higher than if you were to just burn a steel pillar, or a wood pillar.
