Can I farm Mushrooms

Would it be possible to farm mushrooms in a dark room inside a mountain (obviously terrain will be soil)

Darkness, adequate soil, decent temperatures and overhead mountain will get wild fungi growing. You can use the no sowing tactic with grow zones to farm them slowly. Mods can allow you to grow cave plants directly.

To explain: if you set a grow zone to "no sowing" then pawns will only harvest from the zone, not plant anything. Great for patches of berries/agave and ambrosia and usable for fungus.
