If you can't slaughter them immediately and butcher them for meat. Their tusks sell fairly well and the elephant skin can be used to make clothing, sleeping bags or armchairs.
If you can feed them, can you train them?
If you can't train them you can either slaughter them or sell them. Or use them as a short term caravan animal.
What's the best use of a trained elephant?
If you can feed and train the elephant you can use them as outdoor haulers. Elephants are very intelligent and are one of the few animals that can be trained to do everything (attack, rescue and haul). You can breed them but Elephants eat a lot. You probably don't want more than half a dozen.
You can also use them as a biological defense system. Elephants are big and strong. Their size means they can take a lot of hits and hit hard, but also makes them a big target for bullets. Hide them from bullets when possible. Use them to ambush around corners or to bodyguard shooters from any enemy trying to charge your back line.
