Suppose it depends really, I personally make my workshop big enough to accomadate a few tool..benches? Boxs? I forget what they're called, But they reduce total work needed to make something. Anyway, I make it big enough to fit a few of those and what I think of as priority crafting. Machining table, Component assembly, Tailoring bench, Etc. Up to you how big you make the room really.

11 wide with two tool cabinets straight down the middle line so two lines of crafting stations can go down and they all get the benefits. Added plus of having two spaces open on each outer side to avoid the small space debuff. Also allows for flow pots or statues if you like.

Usually keep stations that require lots of ingredients [drug labs] on one side to make things line up more smoothly.

Keep a research bench at the back of the room along with the comm station.

15x15 so it matches the adjacent stockpile sizes. That's enough room for MOST benches + a bunch of art around the edges. And even with a bunch of benches, it's enough to give the spacious mood buff as long as you put the benches at least a few tiles away from the walls.

All my rooms are 13x13 except my dining room (which I make as big as possible) and I have a seperate room for every different CHAIN. So Stonecutting and Sculpting share a room, so do Butchering and tailoring (I used to do cooking + butchering untill I realised that resulted in lots of foodpoisoning due to the room being bloody and unclean).

Much like other people have said though; it also depends on how vanilla your game is as plenty of mods add extra workbenches.

Why put all of your eggs in one basket? You can have more than one workroom.
Think fire, think safe ;)

The standard crafting room I've settled on is 13x6.

You can fit six workstations that are 3x2 each in the middle of the room and have them all connected to two tool cabinets.

Chairs go where people will stand/sit to work at their workstations, and there is a 1-tile gap between the walls and the workstations/chairs.

Big and nice enough to avoid debuffs in generel.
Normally if it's a room where people tend to be for longer periods of time i tend to place stools in the storage area since they can help remove any ugliness from items laying on the floor.
Though keep in mind that the nicer the stool and the more you have of them, the bigger your worth becomes and the harder the raids.
