This was done for only balance reasons. I use the same reasoning as Ashardalon does for my own "RPG"ness.
they might have some parts that make it worth saving them for disasembly even if you disagree with taking organs (i usually only have one spare organ of each you can survive with instead of stripping everything out of every raider)
In this situation I had just put a bionic leg on one of my melee pawns who lost his in an earlier skirmish only to have him die slowly to Malaria. Nice little heads up in the event that I do make it that far in the future.

and if a miracle happens and he does live just stick it back on again
only if his immunity is something like 15 behind, and it is a risk, but legs tend to be rare
so better safe then sorry

and if you take the spares first instead of beginning with the heart you can get more then one
Careful with the mood debuff though.
I've always heard people doing this so they come back with peg legs but I haven't seen it myself. That being said I am inclined to believe that they have to be spawned with them in late game to show up like that. But I'm a noob still, so take that with a grain a salt. It's just what I've read so far.
