Wild man taming bug
The game won't let me tame wild men that I have as prisoners because "no usable food" when I have plenty of food

Ah, maybe taming wildmen is only possible as long as they are free to wander, and because you captured him, you have to break his resistance then recruit him.

Devs changed it, wildmen that are prisoners can only be tamed, not recruited

Maybe it has something to do with food restriction for this guy as a prisoner? I'm not sure how exactly this prisoner taming works. Might be just some bug, since that thing is new, sort of.

I didn't know they could be captured. I thought they were like animals... Could only be hunted or tamed.

I have one in a prison cell right now. Game said with appearance of the wild man that i could tame him. however i did not have the direct option to tame him. i first had to arrest him and now in prison i can tame him. i tried this at least 30-40 times now with a lvl 11 animal guy. the 11% chance always failed yet. maybe the next slavetraders are more lucky with him. its a shame though, hes got promising stats.

If you are having trouble initiating a tame attempt with an imprisoned wild man/woman it may be due to food settings. By default prisoners have certain foods allowed and the rest not allowed, similar to the way you can restrict colonist food choices. To tame a wild man/woman try this:

Click on assign on the bottom bar.
In the Food Restriction column click Edit.
At the top of the popup click New Food Restriction.
You'll see the name change to Food Restriction 7 or somesuch. Rename it if you like.
Click Allow All so that every food type is green checked.
Close that out and select the wild man/woman.
Click the small grey bar that says "Food: Lavish" in their info at the bottom left and a drop down menu appears.
Select the newly created food restriction. Now when you try to tame them it should work. My pawn grabbed rice to use when I did this.

You never know... I have a mental image of him still trying to stuff a basic meal down the throat of a three year old skeleton in a dungeon now.

For those still finding this thread, I can confirm that bluesteel's answer is more than likely the correct one. Just change the food policy and it should work.
