One of my personal favorites is Manchego. Tart, zingy, sharp. Yeah, you can eat it with crackers, but it's very nice straight up. Sometimes other flavors just get in the way.
And, the best crackers? I don't get fancy there. Good old fashioned Ritz crackers. Yes, the ones in the red cardboard box, made by Nabisco.

For me, I am a bit vanilla in that I really love melted cheddar cheese. Especially with a piece of meat. If you ask me, melted cheddar goes with ANY meat.
Once I grew up and had travelled a bit, then Gruyere, Monterey Jack, Mozzarella of course and Halloumi. I'd happily eat a 4 cheese pizza with the first four, but Halloumi is different, I'd grill that.

Not a big fan of melted cheddar; doesn't seem to melt well in the oven. Still tasty, but cheddar can overcook REAL fast if you don't watch that oven closely. You need to take it out right when it starts to bubble or the texture gets weird.
A while back, me and some friends tried making homemade pizza. Tougher than you would think. We used pure mozzarella for the cheese, and it didn't taste quite right. What cheese mix do pizza places generally use? Is it a mix of mozzarella and parmesan or something?
And yeah, now you know why this is my standby topic... always good for a thread that has already derailed itself LOL.
Try to cut large thick slices of mozzarella and sprinkle something like monterey jack liberally all over. The mozzarella has to be thick, because if too small or finely grated, it will shrivel and overcook. If you want an authentic flavour and texture, then push the boat out and pay a little more for mozzarella di buffala (made from buffalo milk) as opposed to the cheaper regular dairy milk. The trick though to a great pizza is learning to make and bake a good bread dough and a good Italian tomato sauce as a base coat. Get those two right and then it can't really go wrong ;)
