Butchering human corpses?
Whenever a human corpse is stored in the freezer, it goes untouched. I've seen mods that change various things about butchering them, but my pawns refuse to even cut up one. getting annoying because the freezer is now mostly dead bodies.

Unless your doing a canabal thing or feeding to animals it's not good to cut them up. Bury them or stock pile them far from your base. Or cremate them. But I will assume you know what your doing.

The answer to your question is probably your butcher bill. Go into your butcher bill. And you need to turn on butchering humans etc. Other possible issues could be that maybe the bodies are rotten. So you may need to enable butcher rotten? I don't personally butcher bodies often so these are my best gueses. Also possible your butcher may be very busy. So you may need to take your butcher and manually prioratize them to butcher by right clicking on the butcher table or the body and select butcher.

Did you set humanlike corpses to be something that gets butchered by that table?

As for the mental hit you'll take from cutting up human bodies, what you need is a colonist with the Psychopath trait. Stuff like that doesn't bother them.

I would assume "butcher creatures" would also cover humans.

Also i have quite a few cannibals, and the nekrotized undead from rimworld of magic also prefer human meat.

Generally the game won't automatically allow things that would typically cause heavy mood debuffs, such as butchering humans and using insect meat in meals. For that stuff you need to set the bill to allow it.

Human flesh is disabled in the job order by default (butcher table), all u need is to enable it.

it does, but the game sets insects and humans passively to 'don't' because for most pawns it gives debuffs to kill/eat them

Having a colony of cannibal psychopaths completely changes how the game is played
