Dunno if this still is the case, but AFAIK you can tell Steam to stop automatically updating a game.
With some game you can also copy and paste them into separate folders after download.
Dunno if this is the case for Rimworld, however, as I have been with Rimworld since before Tynan went to Steam (and have the version he sold directly on his HP, where you don't have any problems with updates breaking mods ... every update is a separate download which you can put anywhere you like)

How about copy and pasting the Rimworlds folder somewhere else and trying to start it from this separate folder?
Normally Steam should only update the game in the Steam library and not the game in the copied folder (but I guess staring the copy will only work if Tynan doesn't use the DRM that is supplied by Steam)
tl;dr The only (real) protection is moving both the main game folder, and then manually installing the mods (just what the OP is currently doing) to that new folder location.

If i copy my subscribed mods folders from the 294100 folder to the RimWorld/Mods folder, do i need to then unsubscribe from them all? I know it has been suggested above to do so as there could be problems with two different versions of the same mod.
I ask because, it is still early days of 1.0 (new game) and mods are likely to be updated in the coming weeks which i would like to take advantage of (also can i simply update the mods in the Mods folder manually when the subscribed mods get updated and carry on)?
Heck, some mods are vanilla save compatible even when they change gameplay. Some of the even add new items, which amazes me since they should be completly incompatible with vanilla saves. So the idea of making all future patches compatible on purpose with release version is doable, if a bit more trouble that it is probably worth. But I could hope when I noticed release version wasn't in betas sicne it is possible.
What do you mean by move the Rimworld install folder? Do I just move the entire folder C:\Program Files (x86)\Steam\steamapps\common\RimWorld to someplace else? Will steam even be able to find it?
So just to get things straight, ideally you'd see no more updates for this game, ever? Because of the off chance they might eventually break saves? Even though you can just move your folder and finish your game in your version at your own pace, and use an updated version when starting a new colony. But no, convenience is more important than making something amazing even more amazing? Sorry if I seem a bit astounded. I am.
Nope, Steam won't be able to find it.
After moving the folder you then have to start the game (every time) by the executable in the copied (or moved) folder.
Dunno how it is called in the Steam-Version, but in my standalone version it is called RimWorld2059Win64.exe ... may well be that in the Steam Version it is just called Rimworld.exe

It's a mod that lets you set mods to an "offline" permanent version in the actual mod folder rather than the workshop folder, meaning no more updates as long as you load the static version.
Various other tools too but should help in your specific case.
A great mod! I have used it to copy all my mods into the Mods folder. My question is: How do i tell the game which mods to load? the ones in the workshop folder, or the offline ones in the mod folder?
That's great for mods themselves, but I was talking about the core game
