You either hold SHIFT while selecting them or you click and drag a box to select them.
They have to be near each other then you get the merge option.
Yes you can save caravans.
In this case, however, remember that unless you have mods incorrectly loaded that are messing up your World Map, merging IS possible. Take some time to figure it out. There's no pressure, especially if you have a save to fall back on.
Sometimes it looks like theyre in the right spot but are like 45% of the way into the correct tile, and giving them a new Move order will reset their location to the middle of their current tile.
The other option is to have the main caravan sit still and try to passively forage - but I tend to play in colder climates, so that's rarely an option in my games. :-)

If you get *absolutely* stuck, there is another option. Opening the game's settings, there should be a function to allow for multiple concurrent bases.
This would provide the option of setting up buildings and hunting the local wildlife / harvest berry plants to feed your ailing Caravan, in your newly-created second base.
(Bear in mind that if you abandon a location you've claimed as a base, you might not be able to return there. But, if you have people you want to save, this is on non-exploit way to do it. ^_^ )
