Report a translation problem
Try right clicking the butcher's bench instead of the animal. Once you right click the butcher's table a message will pop up; "prioritize butchering", click that. I recommend having your best cook butcher since they'll get most of the meat and leather.
Also make sure you have a bill to butcher your animals. Bills can be added when you select the butchering table.

Prioritize x fridges for 'Animal Corpses', so those cadavers can be hauled always
and waiting -without spoiling- to be butchered when the chef has time.
Then add another x fridges prioritized for 'Meat', so it can wait for when
the chef is going to cook meals that involve meat.
That's generally just my kitchen: the 2 tables and a bunch of fridges walled on a sterile floor.
Then the dinner room next door with x dinner tables, chairs, flower pots, art, tv
and fridges with meals in them (to keep fresh and not spoiling).
I also generally build the leatherworking shop close-by, to keep travel distance light.

Btw, to butcher an animal:
otherwise 'allow' any animal corpse that died earlier (from whatever cause)
or tag tame animal for slaughter (requires pawn trained in animals, best with melee)
