Gold>Jade>Silver>Marble for beauty. All else appear to have no affect on the beauty rating.
You will want to consider durability (hit points) and flammability in your choice as well.
As mentioned above, you have Gold, Jade, Silver, and Marble for beauty, but since the other three are rare, and better used for other things, I usually go with the 'plentiful' Marble for interior beauty.
That said, It get's boring seeing the same whitish colored walls everywhere, and the other blocks look nice too. I mainly just use them for certain themes, like Sandstone for a barn, Slate for.. whatever you want looking a shiny black, others for stone trails, etc.
In the end it doesn't matter a whole lot. You can up the beauty of an area with art and good quality furniture to the point where the difference isn't that noticeable.
There is very limited creativity here, but there is some.
Granite has the most HP, but some folks fail to realize that even though it's not that much more HP compared to the other stone walls, you don't use just a single layer of walls to protect your ♥♥♥♥. More layers means more HP overall, that could be the difference between getting your pawns to a wall in time to start repairing or set up an ambush, or getting there in time for a flood of raiders to come waltzing through a big ♥♥♥♥♥♥♥ hole.
Its not a big issue with HP since double walls, all over simply for weather proofing.
Wooden walls can look great with some mods, however flamable which isnt bad when properly incorporated into a large base that can have fire break out in its sections, works as a method of killing off invaders too and it makes my pyro happy.
Flooring is a great go to for making it easier to look at the base, have a look at Gloomy Furniture for more options.
Then there is the extended series which provides more stuff to look at and work towards.
