Chunks are processes on the stonecutter's bench, to make Blocks.
Blocks are what floors, walls, etc are made of.
(you *might* also need for the blocks to be in a designated stockpile of yours. Shouldn't be needed, but I had problem building a crematorium until i placed my imported blocks into a stockpile)
If you click on the wood floor option, it should open up a wider selection of floors.
Also it they aren't in a storage zone the option may not show like M.K stated prior.
More or less. Wood is actually it's own floor type and you can't make wood floors out of stone. But in the case of flagstone or tiles then yes it will default to like granite IIRC (or limestone?) and you will have to select the granite flagstone for example and change the material to marble.
