I find:
6 tiles is enough to avoid the worst mood debuffs
9 tiles keeps them neutral
12 tiles you can get positive moods (with good quality beds and floors)
This isn't so much for quality, but efficency, but for long term jobs (such as art, smithing, or research (the latter only in the early game)) I like to put the workbenches in the rooms. For longer jobs, it's more efficent that having them go to the workshop.
Walls are 11x11 units. Bed, dresser, end table, 1x2 table, cloth armchair, electric lamp. I like to grow a fair amount of cloth so I can carpet the rooms.
Potted plants are a nice way to spruce it up.
Most of all, keep it clean!
Also, if you make a nice recreation room and dining room, you'll get additional mood buffs.
Ged the mod that allows ironwood, make all your furniture of that. great beauty multiplyer.
when you get a good artist, add statues.
deconstruct anything less than good, try for masterwork or better items.
Your other size room should be 4x5 with a double bed for couples. Some mods allow marriage, pregnancy and children.
Make sure your bedrooms are near food supplies and entertainment centers.
now its just total room size that needs to be good
but i might be wrong, i still have my beds in the middle too
