What do you deem the best materials for making things out of early mid and late game
So here is what I gather

Wood- Early to mid game walls and floors with the exceptions of deserts and ice biomes

Stone- Walls for pretty much the entire game due to being tough and immune to fire and in some cases adding to beauty such as marble (and floors in biomes without wood/good growing periods as I find cotton to be far superior in biomes with all year growing and wood in biomes with plentiful wood)

Steel- The many things that require only steel and no substitutes (can also work as a sub par improvement to wooden doors if you have no plasteel

Plasteel- Best doors in the game only in competition is the uranium door which only adds fire immunity at the cost of rarer materials of 20x quantity and a slight reduction in durability

Gold- Sculptures, royal beds and floors for beauty (mid to late game)

Silver- Sterile tiles for hospitals

Uranium- A great all round material I believe but requires huge quantities so I am not really sure with this one

Cloth- everything that requires cloth and the best material to make floors from going into mid to even late game due the the quantity that you can have it available

Doors? I prefer steel tbh, cheap to produce and quick to repair.
Your average base requires a ton of them and many of them will become replaced by auto doors later in the game anyway.
No, for plasteel I'd far rather use it for deadfall traps = deadly damage dealing!
I also use plasteel for my turrets. They won't increase the damage dealt as do the traps, but they do make the turrets 3x as durable as steel. That makes them much much less likely to get destroyed.

Dont use gold for sculptures unless you dont need it anymore and your artist has a insanly high level. But most cost efficient regardles level of artist is marble. Wood is also a good alternative if you have plenty of it. And wood should be used to level your artist before using marble.

Sterile tiles should also be used in your prison... some of your prisoners might be infected on capture and you really need it then.

Cloth... untill you get devilstrand...

And if you know how to build Greenhouses you can harvest year round regardles your environment. Always buils at least one greenhouse in case the .... happens.

Don't use a different material door compared to a matieral of a wall, for example if your wall is fully made of marble then you add a granite door (granite has more hp) the raiders will attack the walls since it's weaker then the door.

Granite for outer walls and most doors (except where speed is important). It has the most HP by far of anything and is the hardest to break through.

Use wood doors, it enhances their raider bait strength so they are less likely to stop and bash your walls and instead rush inside your base to attack a door. This works better with a base without a main door, where all the corridors are considered outdoors and raiders can path to any door in your base when they spawn, but they still have to run through your main defensive position(s) to get inside. Use like marble/limestone/slate outer walls, and if you need an outer access door use granite, this wont present any weakspots in your wall making it less likely for them to attack the walls or outer door in those areas. If the wall is granite and the door is granite, a few might go for the granite door.

If you just have solid granite walls all around and granite doors blocking access to your base, you will have some raiders going for the granite doors and some just going for random granite walls, it's a mess and any sort of centralized defense position wont work very well.

i usually go with:

always:
slate walls
slate floors
steel doors (autodoors if possible)

for bedrooms
early:
wooden floor
wooden bed
mid:
carpet floor
wooden double bed
late:
golden floor
golden walls
golden royal bed
golden grand statue

hospitals
early:
space ship tiles
steel beds
late:
silver hospital beds
sterile tile
silver walls

prison
early:
sleeping spot
late:
steel bed
spaceship tile
granite walls
uranium stool

as for weapons:
early:
what you can loot
late:
plasteel swords
power armor
miniguns
sniper rifles

as for clothing:
early:
what you can loot (from raiders who attacked you but are useles for you, so you strip them and let them freeze to death)
mid:
cloth everything
late:
devilstrand everything
even more late:
hyperweave everything

so yeah, in early i try to go with wood or slate, as i try to research stonecutting first if i don't have it, and it's the first thing i do. i'll have steel problems later on, so i won't make walls out of it.

in mid, i am expanding my base and equipment a bit and try to increase my ressource income as well as stabilizing food by growing indoors, so i don't tend to upgrade what i got.

in late, i already have everything i need, and i use mods and trades to get everything i need, so i build everythign from the best and most fancy materials

(core drill mod is extremely helpful with this, yet i still lack components, so i end up with a bunch of crafters, and everyone else is cleaning, hauling or mining stuff :D)
