How to work the Stonecutters Table
I have plenty of the Slate/Granite/etc Chunks, but when I try to prioritize the table, it says that there are no materials available.

Items usually need to be in a stockpile to prioritize working a table IIRC. If they are working it on their own they will grab chunks not in a stockpile within the designated radius. Make a stockpile near the table for chunks and have your haulers move all the rocks there so your stonecutter can work even faster.

Increase the material radius in the craft order you created on the table. You can set different radii for different orders.

Make sure whoever is supposed to use the table isn't restricted to an area that doesn't have access to your supply of slabs

First create a dumping stockpile. After building your stonecutter table, select it and select bills. From the bills menu you can specify which building materials to be used to make blocks. You can then select a finite amount to be made, or you can set their build que to 'forever'. However, you must have blocks in a stockpile, or dumping stockpile zone, and any bills associated with their material to build them into usable resources for building walls, and other items.
