I have cattle (actual cows not muffalo) and let them come inside the certain parts of our base for warmth but don't restrict them to it and they survived the last -20 winter without losing any limbs.
Playing on arid shrubland, i couldnt allow them to roam free, otherwise they would eat the grass in one area and then stay there and starve untill they wandered close enough to another dirt patch. I had to set zones and cycle them, otherwise i would have to rescue chickens daily that were too dumb to move 30-40 tiles to eat.
Keep a food stockpile for them in their coop. Dont let them in your freezer. Other then them being dumb and dieing, chickens are dirty and leave filth everywhere.
