In my opinion, Thrumbos are never worth the risk to hunt. They'll give you more meat than you'll ever need - unless you've got an entire pack of Wargs and other meat eaters - but colonists can be hard to replace... and you might never get over the emotional void when they die ;~;
Or just play cat and mouse while taking pot shots from doors.
You use the 'peek-a-boo' method with two pawns. One pops out at one end and shoots then when the Thrumbo goes to attack the other pops out at the other end and shoots. Whichever pawn is under attack retreats back inside. It will take a little time but is well worth the massive amount of meat early game and the valuable horn.
You could thoretically use wood doors but you would be mighty brave.
