Do colonist "professions" have anything to do with any kind of skill boosts?
For example. I have a colonist that says: Dinosaur, Weaver. Does this mean he will have a skil boost to tailoring crafts?

I don't know about the direct comparison you've made here, though I think weaver does come with affinities to crafting. On the whole though, yes. Profession matters.

If a Sheriff or Model calls you over the radio as a refugee. Bar the doors, good man. Let the horde take them.

Take, for example, the first colonist my work tab. It says Ma, Blacksmith. Would the blacksmith designation in itself give any boost to crafting weapons and armor and other things of metal origin? Or is it just something the game gives them based on their skill set? In this characters particular character tab, it says that in her adulthood she was a blacksmith which gives boosts to shooting, ,melee and crafting.

I have a colonist who is a sheriff. He can basically do nothing at all. Virtually everything is disabled. So I have him set to hunting.

Just a skillset thing. The RNG at item creation is unchanged except for the obvious changes a higher skill would give. A 15 smithing blacksmith would be the same as a 15 smithing recruiter.

Edit: if only I'd warned you sooner about sheriffs :(

Hehe. So far he's been quite usefull. I have a full time hunter. He also has a penchant for art too.

I mean, I get it, fulltime hunter is definitely a boon. I just..loathe seeing that idle clock icon.

Yeah, he spends a lot of time sitting on his butt to be honest. I have 4 hunters of varying skill set and my freezer gets filled up pretty quickly. I've never had a model before haha!
I have a beautiful nudist model whom everyone just adores, but unfortunately all she's good for is chatting people up. She's broken a lot of hearts. It's like I'm playing As the Rimworld Turns.

Couldn't you give those others something better to do, and leave all the hunting to the sheriff? Or the sheriff and one other?

Profession is based of pawn's backstory. And backstory has major impact on pawn's initial skills and what it won't be able to do. Also, oftenly they have a passion for skills boosted by backstory. But it gives no modifiers to work speed, production quality or learning speed by itself.
