The ores in the wall do not respawn, correct. I'm not sure about those small boulders lying arround that give small amounts of coal, tin or whatever. If they do, they spawn at random places. I didn't verify this long enough - sometime had the impression that new ones appeared, but then again thought they don't.
In general you should find enough of everything to finish a normal playthrough without lacking anything. Also you will soon find enough black diamonds to build enough mapstones to travel forth and back.
If you have large building projects in mind, then you can still switch with your character to a different world, harvest material there and then go back to your main-savegame with the inventory full.
And maybe backing up your savegame is a good idea every now and then. I haven't done that yet, but there should be a way to do it by copying the correct folder. I read of cases where people lost there savegame out of nowwhere. Didn't happen to me in two playthroughs though.
The small ore boulders on the floor do respawn, but I have no idea how fast; seems to be a couple of ingame days.
I assume you can also just create a new world, bring your existing character into it, and just stripmine the whole new world. The only limitation would be bring back only what exists in your characters inventory.
