To do it in stealth, I would check where the cameras are located in main room/how many there are and the angle they cover. If you are fast enough you can destroy two cameras for a single strike, so that would allow to destroy up to 4 cameras, without alarm. Then remain the threat of guards. I would start from the back and try to catch guards in the back rooms and backyard out of camera coverage. If you manage to pull it there should be 2 or 3 guards left in main room depending on the preset.
Then I would either draw guards toward back rooms with bricks and subdue them there if it's possible outide of camera range, or, if daytime and/or camera placement allow it, I would try to enter lobby and push down the guards quickly then destroy cameras before they call backup. Don't forget to push the red button to close the windows shutters, so you don't get attention from outside. Also check if there is no cop patroling the entrance of the building, I've got a few presets where that is a thing.
That really depends on camera number/placement. If it's too complicated, I would probably just abandon the secondary objective.
EDIT : just tried it agaiin and you're right, it seems to not work anymore at all in extreme difficulty
Also, I just thought of something I never tried : disabling camera with jammmer, then destroying it. I wonder if it still gives a strike or if there is something to exploit with that
EDIT : O M G.... It works. for real it works. Destroying jammed camera do not gives strikes
well, as I just tested in extreme, you can disable camera with jammer then destroy them and you won't take a strike for it... Although they will probably still arise guards alert gauge if spoted like other destroyed cameras, This is quite a game changer

Somehow I think this wasn't intended.
