should i sell old weapons?

because they seem to have a level, do they get levels when i use them or do i find higher level weapons like "gladius lvl 2"?

No.
Weapons can be upgraded with items you find/enemies drop. It'll get explained (in game) when you get to the appropriate point in the storyline.

Keep them if you want to get all Achievments. If not, you can buy most (not all i guess) weapons later in the game.
They level up if you use upgrade materials on them.

No, as far as i remember, you can buy most of the weapons later in the game. If this counts for the very first weapons, i don't know exactly

You can buy everything in the shop except of a few elemental resistance rings which you have to find during the chapters 1 - 10. If you miss one of those rings you can't get the achievement.

i am in chapter 3 now and the levels are very linear so i think i will find all rings.

Think I am going to do one playthough without using a guide so I can enjoy exploring etc and then next playthrough I'll use a guide to find all the stuff. I never found a ele ring in chp 1 =(. This game is really fun

There is none in chapter 1, I said during the chapters 1 - 10. Because if you reach chapter 11 you can't return to the old places. So if you miss something beforehand you won't find it. I don't know when exactly those items appear.
