It's more a story about several characters coming together for different reasons, forming a bond, and uniting to face adversity. I'm sure you can make arguments for some characters coming off more compelling than others, but this game does a pretty great job giving them all the spotlight.
However, I will say Lightning is probably the closest thing the group has to an actual leader. I imagine that likely creates a little bias when it comes to reinforcing her as the main protagonist.

I suppose because Vanielle is my favorite, I see her as the main main protagonist, but you're more accurate in your statement :D
Lightnings part in the story was based on circumstance and really didn't mean much to me other than lady wants to help her sister. Fang was the one who transformed into ragnarok and is the main focus of the finale, think this whole game belonged to fang imo.
Saving Serah is not only the first major story arc, but it's also the story arc that's by far the most prevailing throughout the entirety of the game. Any sense of resolution is always tied to the goal of saving Serah.
In contrast, we don't even know what Fang and Vanille's true motives are for over half the game. Fang literally lost her memories while Vanille pretends she has as well. They are purposely made ambiguous and mysterious while the characters around them are pretty much open books. All of this makes it very difficult to suggest either Fang or Vanille are the sole main protagonists.
The scenes before and after the final boss are both Fang and Vanille's character arcs coming to their climax. It's definitely Vanille and Fang's moment to shine but, more importantly, gives them relevency within the story that was previously lacking.

The reason imo lightning took over the main character slot in the sequels, is the same reason wolverine got his own super popular comic series, popularity.
