I had this exact same issue until someone recommended launching the game in DX11, creating a manual save, and then re-launching the game in DX12.
I had routine crashes with hairworks enabled until I did the above steps. Since then, I've logged in well over a dozen hours with no crashing, hairworks enabled in DX12.
I know CDPR released a hotfix for crashing with hairworks in DX11 awhile back, and I have a theory that the game needs to be launched in DX11 for this fix to "take". I don't quite know if that's how these things work, but it fixed the crashing on my end.
May have something to do with the Steam overlay, as some people say running the game's .exe from the folder causes the crashes to stop, doing so also turns the overlay off completely.
I do not know if this will fix the problem completely. But I tried to change something. I turned off nvidia reflex, turned off vsync, installed it in a window without frames. And the whole session that I played, for about 3-4 hours, the game did not crash. I assume that the main change that affected this is nvidia reflex, because I tried to change the rest of the settings before that.
I will give that a try next time. 8
