Not sure I understand the question, what would even change?

Resolution and performance?
I don't have this game on my Steam Deck but I don't notice any difference in other games between docked and undocked, The biggest downside is undocked you'll only be able to play for a couple of hours before the battery dies

I gathered that, do you usually play same resolution or do you scale to 1080p when docked?

Why would performance change? Steam Deck doesn't run any better or worse when docked, unless you have it set up so the performance is throttled in handheld mode to save battery power, or if you increase the resolution when docked, obviously performance will drop as a result.

As for resolution, can't really compare playing on a small screen with a smaller resolution to playing on a bigger screen with bigger resolution. But logic dictates that playing on a lower resolution is less demanding for your hardware, and since a lower resolution also looks better on a smaller screen then it follows that playing in handheld mode will give you the best combination of looks/performance. As with any other game on Steam Deck.
