Horse riding tips
I went 50 hours into the game before figuring this out and constantly getting annoyed. If your horse is always coming to a full stop for no reason, particularly when on bridges, then make sure you are pushing the left analog stick up the whole time the horse is galloping and it should never come to a full stop again. This also stops it from randomly turning even when riding in the brush. Horse controls still suck though imo it just makes it a bit less frustrating.

Wait, people didn't know that already?

I guess this finally explains why people were having trouble with the horse controls. I only ever just hold the gallop button on roads - whenever I'm off-road, I use the direction keys as well, and Roach almost always gets past obstacles.

For the longest time I was just steering left and right and it always kept stopping. Took me forever to realise it lol.
