I beat the Baron, Haddy, Boatmaker, all flawlessly. This little ♥♥♥♥♥ is a REGULAR TRADER in a hic town.

If you're getting crap for draws, just forfeit and start again. If you have spy cards you should already know how to beat every single gwent NPC.
The hic town part is the problem. I'm stuck living in one myself, and you'd be surprised how many of those degenerates are pro-level MtG players. It's mostly due to them having nothing better to do in the area than inbreeding and pre-marital sex/children or drugs.
It's the same town where you do the mission with Crach's daughter where you have to help the possessed Jarl.
Discard 2 non spies at all times so you have 12 cards drawn at the start. Discarded cards go to the bottom of your deck. Now pray you get more or all spies at start. In a perfect starting hand you'll have drawn through 12 cards and draw 8 more using the spies, then on a round win you draw number 21 which is the first card you discarded at the start. Could throw a horn in there they usually do more good than harm just slightly less chance you'll get all your spies. The less cards in your deck the more chance you get all 4 of them and when you do it's pretty much game over.
